Mawmaw’s Lemon Meringue Pie
The smell of fresh lemon zest and Vanilla meringue fills our home every year before Thanksgiving. It’s a tradition in the Evans family every year to make homemade lemon meringue pie. Years ago my Mawmaw’s Grandmother taught her to make this yummy pie and she has passed this same recipe and tradition down to me. She is now sharing this top secret recipe with you. Many say anyone can follow this recipe and make a pie but it really takes love for it to taste so delightful.
When you’re getting ready to make this pie you need a few simple ingredients to get started. When you hear to the grocery store or ravage through your pantry this is what you will need. You need some sugar, corn starch, salt, eggs, two lemons, fresh lemon juice, butter, vanilla and cream of tartar. It’s best to lay out the ingredients before you get started so the process is not so confusing. You will also need to prepare a pie crust before making the filling and meringue, but you may purchase pie crust for a more timely process.
You will need to preheat your oven to 350 degree’s after the crust for pies are cooked. In a medium sized bowl mix 1 ¼ cup of sugar, ½ cup of corn starch, 1 ½ cup of cold water and ½ teaspoon of salt gradually until mixture is smooth. Now transfer mix to a medium sized pot and cook over medium heat, stirring constantly until mix boils. Let mixture boil for about one minute, then remove from heat.
Now you will need to separate three eggs and keep yolks and whites in separate bowls. Beat egg yolks with a fork and stir in ¼ cup of hot mixture into egg yolks. Combine yolk mixture with hot mixture and cook over low heat, constantly stirring to prevent lumps and sticking. Now take your filling and remove from heat. Add in your butter, lemon zest and lemon juice and mix evenly. Let the filling for your pie cool for 15 minutes and then pour it into cooled baked pie shell.
