Honey pecan pork chops
10 ounces boneless pork loin, pounded thin
1/4 cup all-purpose flour for coating salt and pepper to taste
1 tablespoons butter
2 tablespoons honey
2 tablespoons chopped pecans
Directions:
In a shallow dish, mix together flour, salt and pepper. Dredge pork cutlets in the flour mixture.
In a large skillet, melt butter over medium high heat. Add cutlets, and brown both sides. Transfer to plate.
Mix honey and pecans into the pan drippings. Heat, stirring constantly. Pour sauce over cutlets.
Mashed sweet potatoes
2 sweet potatoes, peeled and cubed
1/4 cup milk
3 tablespoons butter
1/4 cup maple syrup
Directions:
Bring a medium pot of salted water to a boil. Add potatoes and cook until tender, 10 to 15 minutes.
With an electric mixer on low, blend potatoes, slowly adding milk, until desired texture. Add butter and maple syrup to taste. blend until smooth. server warm.

1/4 pound fresh asparagus spears, trimmed
3/4 teaspoon olive oil salt and pepper to taste

pre heat oven to 425 lightly coat pork chops with 1 tablespoon of olive oil. sprinkle kosher salt and pepper on the cutlets, place in 9x13 baking dish and put in oven for 10 min. taking dripping add honey and pecans, then pour over the pork chops and serve.
