They may use Rigor Mortis to tell how long ago the muscles become rigid, and they may use Livor Mortis to determine when the blood settled in the body and stopped pumping.

A forensic anthropologist identifies and examines skeletal remains.

If the data collected at a crime scene is wrong, or has been tampered with, then someone may be guilty of a crime that they did not do.
