The food born illness that I have chosen to write about is Salmonella. Salmonella is a non spore forming bacteria; it comes from the family Enterobacteriaceae and the tribe Salmonella. Salmonella is divided into two species which is S. entercia and S. Bongori both of them is pathogenic to humans. S. Enterica is more of a health concern to humans; currently there are around 2,600 stereotypes that have been identified. Pathogenesis is different depending on typhoidal or nontyphoidal infections.

This infectious agent Salmonella is transmitted through water by having a bowel movement that comes from either an infected human or animal. How this can happen is because of sewage overflows, sewage systems that do not work right, polluted storm water runoff and also agricultural runoff. This infectious agent Salmonella is transmitted through food because this bacteria can be found on a lot of food such as raw poultry, eggs, beef and fruit. Salmonella is also transmitted by cross contamination.

An example of a real life outbreak of this food borne illness Salmonella is the Foster Farms chicken outbreak. This outbreak occurred in October 2013. Seven strains of Salmonella Heidelberg bacteria was linked to this outbreak, on October 29, 2013 three hundred and sixty two people infected with this outbreak were reported from twenty one states and Puerto Rico.74% of most ill people have been reported from California, and 38% of sick people were hospitalized. And there have been no reports of deaths.

Most Salmonella infections are classified as gastroenteritis and the clinical symptoms of Salmonella bacteria are nausea, vomiting, abdominal pain, diarrhea, fever, chills, headache, muscle pains and blood in the stool.
