2.5 Food Safety Work File

Directions: Complete the food safety interactive quiz. Use the information from the interactive quiz to complete the following responses regarding food safety practices.

For each of the following food safety practices, share at least 2 statements from the interactive quiz. Be sure to put these statements in your own words and explain why they are helpful in preventing food borne illness. An example would be: When dining from a buffet, make sure hot food is hot and cold food is cold. Food that is 40 – 140 degrees Fahrenheit has already begun to grow bacteria and pathogens.

Clean (16 points):
1. If you had your cat sitting on the counter make sure you clean the counter immediately. Tell an adult so the counter can be washed with hot, soapy water.

2. When you get fresh groceries from the market such as fruits and vegetables make sure you rinse them to reduce the amount of bacteria already on the fruits and vegetables, before you eat, cut, or cook it. Firm skin fruits and vegetables need to be ran and rubbed under tap water. Firm fruits and vegetables need to be scrubbed with a clean produce while running it under tap water.

Separate (16 points):
1. When handling raw foods made sure they are kept away from food that is already prepared and cooked. You do not want to cross contaminate harmful bacteria.

2. If your cousin was cooking chicken and put the cooked chicken on the platter that previously held the raw chicken without washing it properly, throw away the cooked chicken. Every time you use utensils, dishes or cuttings that come into contact with raw meat, poultry, or seafood you used make sure you wash it with hot, soapy water afterwards.

Cook (16 points):
1. Before you eat your hamburger make sure it has safely been cooked. Your hamburger should be at the safe minimum temperature 160 degrees Fahrenheit for the inside.

2. If you’re cooking frozen food make sure to thaw out the food first. Then, cook it in an internal temperature so the bacteria present can be killed.

Chill (16 points):
1. When going on a picnic with refrigerated food make sure the food is kept cold be either having it frozen or put in a cooler.

2. If you had food left over from dinner last night that was left on the counter for 8 hours you need to throw it away. While the food was left out bacteria can grow in it especially if the food was in the temperatures between 40 and 140 degrees Fahrenheit.
